Menu Plan Monday- the breakfast plan


It's another cold and gray morning here in Nebraska. As I served my kids yet another round of cold cereal, I wondered what else we could have for breakfast that is quick and easy. Something that would warm us up and keep us going all morning long. Our breakfast options have stuck to just a couple basics: cereal, oatmeal, and bagels. So, today I'm rethinking breakfast and will attempt to try other things this week. Here is my first edition of a breakfast menu!

Monday- cereal, milk
Tuesday- scrambled eggs with cheese and ham
Wednesday- oatmeal with apples and milk
Thursday- cottage cheese and bananas
Friday- Cornbread and applesauce
Saturday- Sausage and cheese biscuits (made ahead of time)
Sunday- leftover biscuits, fruit

I like making baked goods ahead and then just pulling them out of the freezer -- muffins, quick breads, cinnamon rolls, etc. Ever since I got a waffle maker for Christmas I have been planning to make waffles ahead and freeze them too...but that has not happend yet! Those ideas take some advance planning but are quick on the morning you eat them.

    Baked oatmeal is a nice change of pace too (well, I like it anyway...but my kids don't so I don't make it very often).

    Or how about other hot cereals like Cream of Wheat or Grits? Tony thinks that leftover rice heated up with a bit of milk, cinnamon and sugar is great for breakfast. I think that's gross though!

    I've heard you can make breakfast burritos ahead and freeze them -- I always just make them at the time we are going to eat them. We also like fried egg sandwiches (egg, toast, and cheese) and peanut butter banana toast.

    In rhe realm of things that are a little bit odd that I like to eat for breakfast...I enjoy cheesy mashed potatoes or a tortilla with cheese (heated in the microwave for a few seconds to melt the cheese).

  2. I'm definitely a fan of muffins, breads, pancakes, waffles, french toast...I freeze them all! I usually have a "baking day" each month dedicated to cooking up a bunch of dinners and breakfasts for the following month, and it works wonders!

    Breakfast burritos are great too! Even hot pockets are great for breakfasts!

  3. We have the same issue! Breakfast is just boring. I do freeze waffles, breads, and muffins for my family, and it works out well.
