Menu Plan Monday
One thing I've learned about dinner time is that if the meal takes a lot of work to prepare, I just don't want to do that clean up. And if it only takes a little bit of work to prepare, I still don't want to do the clean up! Today, I remembered that my skillet can go in the oven. I have one recipe that utilizes this feature- you brown you chicken in the skillet, add the other ingredients, then stick it in the oven. Do you think I can do this with any type of casserole I might make? What one-pot meals do you make? Even crock pot meals are great- as long as the crock pot is the only dish I have to clean up!
Monday- BBQ Pork Chops, Potato Salad, Green Salad
Tuesday- Date Night! Fried Rice for kiddos
Wednesday- Green Bean Casserole for small group dinner
Thursday- Burritoes
Friday- Pizza Night
Saturday- Fried Rice and side dish for Cub Scout dinner
Sunday- Eat What You Want Night

Menu Plan Monday
I've gone without a menu plan for a couple of weeks. I realized that I desperately need my menu plan! Some people say they like the freedom of choosing their dinners each night or wonder what they would do if they don't feel like eating what's on the schedule. I say, you'll feel like eating what's on the schedule if it's planned out for you and you have all the ingredients in the house! My grocery shopping has been pretty sporadic, which means I'm out of potatoes How could I be out of potatoes?!? It's hard deciding what meat to pull out of the freezer in the morning, hard to decide what to do with it in the afternoons, hard to make what I want with the ingredients we happen to have lying around.
So, back to my menu plan! It will be so good to save my brain power this week for important things- like decluttering the kids' clothes and planning a field trip! I also discovered that without a plan I just wanted to go out and pick something up. I've decided to have a "busy day backup" of items quick and easy to prepare. Then, when I feel done in after a busy day it will be easier to pull that out than head to the grocery store for deli chicken! What kinds of meals do you keep on hand to save you a trip through the drive thru?
Monday- tuna casserole
Tuesday- roast, potatoes, carrots
Wednesday- fried rice
Thursday- tacoes
Friday- pizza night
Saturday- graduation party
Sunday- mother's day picnic
Back up- hotdogs, chips, fruit
That's my plan! Check out more plans on Menu Plan Monday at orgjunkie.org. What's on your menu this week?

Menu Plan Monday
I usually love having meals together with other families. Whether the menu is planned out, or it's just a regular ole' pot luck, I love them all. I love weddings and graduations parties. Pretty much anything that means I don't have to cook for my family. :)
One of the worst parts about not eating dairy because of baby is having to avoid food of all sorts that I have not cooked (and I barely trust that!). I don't know that I have a point to all this complaining, but it has certainly made me more conscious of the food issues that other people may have and has altered the foods I bring to events, even when I'm not nursing a baby. Now, when I have a brunch to attend, I bring a hot item that doesn't contain cheese. When it's my turn to bring snacks, I'm opting for fruit salads and peanut butter on celery sticks. And when we have a pot luck to attend, I bring along a sandwich.
This past weekend we went to a wedding. It was a beautiful ceremony, but I kept wondering what would be served as the meal. It turns out that I could safely eat about half of it, so I was fine. (I had a granola bar along, just in case!) This summer is probably going to be filled with church potlucks and picnics since we are putting the finishing touches on a building and everyone is looking forward to doing that sort of thing. (I am not.) What do you do when attending an event where you know you won't be able to eat the food? Any tips for me?
Monday- Tuna Casserole (mine made separately without cheese)
Tuesday- Roast
Wednesday- Fried Rice
Thursday- Sausage and potatoes
Friday- Pizza Night (mine made without cheese)
Saturday- Leftovers
Easter Sunday- Dinner w/family

Menu Plan Monday
We have quite the varied menu this week. It changed from my original plan when I was at the store and saw how good and fresh the bok choy was. And the cabbage was so cheap, I had to buy a head and figure out what to do with it! So here's our plan for the week!
Monday- Bean Burritoes
Tuesday- Pork Chops and Potatoes
Wednesday- Corned Beef and Cabbage
Thursday- Chinese Dumplings and Rice
Friday- Pizza Night
Saturday- Brats and Chili Dogs (Birthday Party)
Sunday- Eat What You Want Night

Menu Plan Monday
I write out my calendar for a month at a time. I'll make little changes as we go, if we have meals with friends, don't have leftovers, run out of something, etc. But sometimes I hit the wall. A day comes and I just don't feel like making what's on my calendar. I'm so used to following it, that I have a hard time coming up with something else. Today was supposed to be chili, but it's been in the 50's all weekend and I just don't want chili tonight. I need something in my crockpot or quick because we have a late afternoon commitment on Mondays. So, I have no idea what I'll be making tonight- probably just the chili that's on my calendar! What do you do when you don't feel like eating what's on your schedule?
The plan for this week:
Monday- Chili???
Tuesday- Date Night! Quesadillas for the kids
Wedensday- Venison Steaks, potoates, Veggies
Thursday- Red Beans and Rice
Friday- Pizza
Saturday- Sausage and Potatoes
Sunday- Eat What You Want Night

Menu Plan Monday
This morning I started at my March calendar. The meals are all blank. I didn't feel like planning a menu. I have a freezer full of meat and vegetables, a pantry stocked with rice and potatoes. Surely just having the food in my house would be good enough, right? Thankfully, I came to my senses. I remembered why I plan my menus. Sure, I can coordinate menus and shopping lists and make avoid last minute trips to the store. But I'm also eliminating that 4:00, "it's time to think about dinner and I didn't defrost anything" rut. I started slapping some meals on the calendar, and actually ended up filling in most of the month! It only took three minutes and I will avoid all sorts of headaches later. Without further ado, here's my menu for the week.
Monday- Leftovers
Tuesday- Roast with potatoes and veggies
Wednesday- Pasta and bread
Thursday- Fried rice
Friday- Pizza night
Saturday- Grilled Chicken,
Sunday- eat what you want night.

Menu Plan Monday
I have found that with a dairy-free diet it is really important to plan ahead. When I plan my menu, I can make sure that there is a variety of foods throughout the week, and that there is plenty that is dairy free. If I don't plan and I just open the cupboard and see the boxed sides I'm in a lot of trouble, because they all contain dairy. I'm in the process of finding some easy last-minute type meals that are dairy free. For now, I need to be diligent about planning dairy free meals or substitutions. I also need to be aware of this at pot lucks and friend's houses. Just because I use a dairy-free margarine, it doesn't meat that everyone else does! So, this week I would like to also find some time for making some muffins, cookies, and other things that I can freeze. These I can throw in the diaper bag and have available for the times a plate of cookies is set out and I'm not sure if it's okay for me to eat it.
Monday- Leftover Soups and Fresh Bread
Tuesday- Pasta, Salad, Garlic Bread
Wednesday- Hot Dogs, Mac N Cheese, Carrot Sticks
Thursday- Pork Chops, Mashed Potatoes, Veggies
Friday- Pizza Night
Saturday- Tuna Casserole
Sunday- Eat What You Want Night

Menu Plan Monday- Dairy Free Week 2
Last week we went dairy-free to see if that would help the baby. Good news- it worked! She stopped vomiting and has settled down. Bad news- it worked! No more ice cream, cheese, or chocolate for mom. It catches me by surprise when we discover dairy in places I wouldn't expect. With Eleanor the big surprise was the Ramen noodles. With Roselyn the big surprise so far has been the cocktail sauce. Thankfully, it's only two ingredients that we had on hand, and Greg mixed some up just for me.
I had some powdered soy milk left in the cupboard that I've been using on things, but it's not very good for drinking straight. Time to hit the store for some soy and/or rice milk. When we were in Asia last summer, our host family made fresh soy milk daily- it was so yummy! I saw a soy milk maker on craigslist last week and wonder if it's still there...
Monday- Grilled Chicken and Green Salad
Tuesday- Fried Rice and Cookies (to a pot luck)
Wednesday- Ham Soup
Thursday- Pasta and Salad
Friday- Pizza (leftover pasta for mom)
Saturday- Chili and Corn Bread
Sunday- Leftovers
That's the dairy-free plan for the week. Having a special diet makes planning the menu especially important. Most of my easy go-to meals include cheese (mac and cheese, quesadillas, frozen pizza). Have any dairy-free, quick and easy meals for me to try?
Check out the Organizing Junkie's page for other menu plans.

Menu Plan Monday- Dairy Free Week
I love that when you're nursing a baby you need like 1,000 more calories every day! I usually spend mine on things like chocolate and ice cream. :) Today, however, is the start of a no dairy diet. Why!?! Why would anyone in their right mind cut ice cream!?! Well, my baby vomits after eating at least once a day. And she cries unless she's being held. And she won't stay asleep unless she's being rocked. (Two or three weeks ago she did not cry or need this much rocking.) My baby is seven weeks old and I think she has a dairy intolerance.
We've been here before. I had to cut dairy with Eleanor. I learned a lot about where dairy hides in my purchased foods. I sometimes splurged and bought dairy free chocolate ice "cream" from the health food store. Thankfully, she outgrew it around nine or ten months. If that is the case this time, I'll be eating dairy again just in time for the cheesy mashed potatoes and french silk pie that will be a part of our Thanksgiving feast! For now, though, dairy is out. And this week will be the hardest. I'm sure I'll forget and pour milk on my oatmeal and try to eat some ramen noodles (yup, there's dairy in that!).
Monday- ham soup
Tuesday- sausage and potatoes
Wednesday- turkey noodle casserole (using mayo for my portion)
Thursday- eating out? (or fried rice)
Friday- pizza (with a personal no cheese pizza)
Saturday- Leftovers
Sunday- Lunch for friends Lasagna (Pasta with marinara for me), bread, salad
I'm lamenting the loss of most of my quick meals- mac n cheese, quesadillas, etc. These are the meals I use when life happens and what I have on the schedule is just not going to work. Rethinking that this week. Let me know if you have any ideas! Look up some other menus at the Organizing Junkies page.

Menu Plan Monday- the breakfast plan
It's another cold and gray morning here in Nebraska. As I served my kids yet another round of cold cereal, I wondered what else we could have for breakfast that is quick and easy. Something that would warm us up and keep us going all morning long. Our breakfast options have stuck to just a couple basics: cereal, oatmeal, and bagels. So, today I'm rethinking breakfast and will attempt to try other things this week. Here is my first edition of a breakfast menu!
Monday- cereal, milk
Tuesday- scrambled eggs with cheese and ham
Wednesday- oatmeal with apples and milk
Thursday- cottage cheese and bananas
Friday- Cornbread and applesauce
Saturday- Sausage and cheese biscuits (made ahead of time)
Sunday- leftover biscuits, fruit
And this pretty much wipes out my breakfast ideas! Do you have any quick, nutritious ideas for me? Visit orgjunkie.com for other menus ideas this week.

Menu Plan Monday
Our baby will be four weeks old tomorrow. It's hard to believe she's that old already! God certainly grants grace to tired new mommies, but the sleep deprivation is starting to hit me pretty hard. So, I have no idea what the week will look like and I may actually be napping in the afternoons. The best plan for me in times like this is to utilize my crockpot since I'm more alert in the mornings by nature. However, I'm not very creative in this regard, tending to just throw in a roast or a whole chicken. Please share some of your crockpot recipes. My family will appreciate it! this week is a week of "options," and we'll match one of the following meals to the appropriate level of energy Mama has. :)
Breakfast Options:
Muffins, Oatmeal, Cereal, Eggs
Bananas, Apples, Milk
Lunch Options:
PB&J, Soup, Leftovers
Crackers, Popcorn, Fruit, Carrot sticks, Salad, Milk
Dinner Options:
1. Cheesy Chicken and Rice (freezer meal)
2. Frozen Pizza
3. Pasta
4. Grilled Chicken Breasts with potatoes and salad
5. Venison Stew (crock pot)
6. Pork Roast (crock pot)

Menu Plan Monday- Meals for Kids to Make
It made me realize that once the meals stop, I need to have some quick and easy options. Whether it's because I'm sore or tired or the baby is wanting to eat during meal prep time, or whatever the case may be, I need to have some things that are ready to go at any time. In fact, it would be great if the meals were ones that my kids could make. Since they are 3, 5, and 6 you might thing I'd be relegating my family to cold cereal and microwaved foods. (check out my cereal giveaway!) Actually, all three of them have some basic cooking skills. As long as I'm there to read the recipe and tell them which measuring cup to use, they can pretty much make anything I can make!
Here are some great meals to start your kids out on. I like things that require minimal cutting and one pan- even when I'm the one cooking! The children need to understand the concepts of "hot" and "don't touch" and be capable of immediate obedience. The kitchen becomes a dangerous place during cooking, and we want to make sure that everyone stays safe. Their first helping experience comes in the form of stirring something at the table (about 18-24mos). Once they've demonstrated capability for following directions, they are allowed to help with quite a variety of things, as long as I'm standing right next to them- oatmeal, eggs, pasta (around 3). At first this is more work for me, but they quickly master the art of boiling water and stirring things that are browning and I can leave them at the stove (around 5) and work on another task while that's being taken care of. It won't be long and they'll be planning menus themselves!
Hot dogs, Mac and Cheese
Teach them that bubbles means boiling and you can make almost anything from a box! A great way to teach them about steam and water vapor, too. Hot dogs could be cooked in the microwave or in a frying pan.
Sausage and Potatoes
Brown a pound (or two) of sausage. (There's a neat tool from the Pampered Chef for browning called the "Chop and Stir" (I think) that is great.) Add cubed potatoes, onion, garlic, salt, and pepper. An easy one pan meal. Cutting potatoes is hard for little ones, so I tend to do that part while they taking turns stirring the sausage. Serve with something green!
Pizza
If you have a mixer or bread machine, it's easy for the kids to throw in the ingredients for the dough. Or have some prepackaged mixes on hand. They can learn about measurements and fractions on this one, too. Of course, their favorite part is adding the toppings!
Pasta
Not quite a one pot meal, but pretty close. Boiling water yields pasta and warm up some sauce in another pan. We've even browned hamburger right in the sauce pot to avoid getting a third dish dirty! It's even nicer if you've previously gone to the work of browning several pounds of meat for your freezer. Just hand them a bag and dump into the sauce!
Roast
What could be easier than throwing a chunk of meat in the crock pot? Add some potatoes and carrots and there you go!
Eggs
Scrambled eggs are an easy first meal for kids to make. You can do breakfast for dinner and add some bacon or sausage. Or you could roll up with cheese and salsa in tortillas for a tasty variation of burritos.
I hope this gives you some ideas for having your kids helping you out in the kitchen. What are some of the things you have your kids help you out with? Check out Organized Junkie's page for more menu ideas!

Menu Plan Monday
Some weeks, you just don't know what's going to happen. I've discovered that even the framework of a menu plan can help. Less than two weeks ago we had our fifth baby. This is my first week having all the kids in my house by myself. I'm a little nervous. I'm sure the baby will always want to eat when it's time to make dinner. So, my plan is to have a list of meal options that I can choose from depending on how the day is going. I am also being blessed by my friends and will have dinner delivered to my home a couple of times this week. Here's my list of meal potentials:Breakfast: oatmeal or cereal, fruit and milk
Lunch: sandwiches or soup, fruit or veggies, crackers, milk
Dinner options:
Cheesy chicken and rice (freezer meal from a friend)
Sausage and potatoes (this is one the kids can make)
Pork or venison roast with potatoes and carrots (in the crock pot)
Pasta (another one for the kids!)
Frozen pizza
Grilled chicken with potatoes and salad
I'm hoping that gives us enough flexibility to get through the week! What are your easy go-to meals? How do you handle meals during tough times in your life (after a new baby, sick family, etc)?

Menu Plan Monday
This is my last week of menu planning for a couple of weeks. We're having our new baby in just eight days! Next week, my mother-in-law will stay for a couple days. She and my sister-in-law will take care of Christmas dinner. They told me not to worry about anything, but I'm thinking about baking some breakfast goodies for my freezer as my contribution. :)In the past when we've had a baby, we've usually had several friends offer to bring us meals. It's so nice to have one less thing to think about during the day with a newborn. I've also doubled a couple of family favorites and frozen them throughout the month. This year, I didn't, needing to keep room in the freezer for the deer my husband is hopefully shooting tonight!
Knowing what a huge blessing it is to a new mom, I have done my part to provide meals over the years, as well. Sometimes I've wondered if a sack of lunch and breakfast items would be just as appreciated. (And quite honestly less work for me!) Or an offer to vacuum the house (especially after a c-section). What do you think? What other kind of help could be offered to a new mom in those first couple of weeks?
Monday- Chicken strips, potatoes, veggies

Wednesday- Pasta

Menu Plan Monday

Next week is Thanksgiving. I tried buying one of the .40/lb turkeys from Wal-Mart last night, and they were all out! I'll try again tomorrow. I'm hoping to cook and debone a couple of turkeys for my freezer. That's such a great price!
I also need to make some room in my freezer for (hopefully) another deer this season. And get some freezer meals in there ready to go for January (baby coming end of Dec). Plus, I still have two pumpkins that need taking care of, and a basket of tomatoes that actually turned red! There's a lot on my cooking to do list in the next couple of weeks!
Lunches- PB&J, pretzels, apples/carrots, milk
Dinners
Monday- Pasta
Pasta, Sauce, Hamburger, Bread
Tuesday- hot dogs
Hot dogs
Fried Potatoes
Veggies
(+cook venison for tomorrow)
Wednesday- Venison stew (in crock pot)
Venison, Potatoes, Carrots, Onion
Thursday- Chicken and Rice
Chicken breasts
Brown rice and broccoli
Friday- Pizza Night
dough recipe:
2 c warm water
1 c oil (vegetable is good, olive is better)
2.5 tsp yeast
2 tsp sugar
3 tsp salt
5-6 c bread flour (can sub 1/2 whole wheat)
optional- add italian seasonings (basil, oregano, garlic) to the crust or make breadsticks!
Let dough rise for one hour, punch down, rolls out 2-3 crusts (depends on thickness) top with favorite ingredients. (If making bread or breadsticks, let rise for 30-45 min after shaping)
Bake at 425 for about 20 min
Saturday- Eat What You Want (ie Leftovers)
Sunday- (Thanksgiving at church) Sweet Potatoes
sweet potatoes, butter/margarine, marshmallows
Do you have a good sweet potato recipe? I need to make a lot of these and my normal way may not be the best suited for the crockpot. Any suggestions?

Menu Plan Monday
I've been in a menu planning slump the last several weeks. Nothing sounds good, everything is too much work, we eat the same things over and over...sound familiar? I'm sure we've all been in this position at one point or another. Well, I'm taking the advice of a friend and am in the process of creating my "master menu." (Check out her blog post here.) This will be a compiled list of all the recipes we use consistently. Mine's almost completed. I have a huge list of about fifty items, now I just need to figure out what makes sense for organization- by meat type? by carb type? by meal "genre"? I may just set my husband loose to build me an excel spreadsheet. I could type the info into various columns and print lists according to all those methods. I could easily add and reprint as we find new family favorites. Then I can look at my list when I'm in a slump and remember the meals that we like and haven't had for awhile. This should enable me to put some variety back into our menu and maybe even have enough time and energy to pull out my cookbooks and try some new recipes! What do you do when you're in a menu slump? Do you have old favorites you go back to? Do you pour over the cookbooks?Breakfasts- cereal, bagels, oatmeal, muffins, fruit, milk
Lunches- pb&j, pretzels/popcorn, apples/carrots, cheese, milk
Dinners-
Monday- Grilled Chicken, Fried potatoes, broccoli
Tuesday- Fish and rice
Wednesday- Bread and dip, cupcakes
(appetizers and desserts with friends)
Thursday- Venison Stew
Friday- Pizza Night
Saturday- Birthday meal (still planning)

Menu Plan Monday

Having been sick for several weeks, it takes a lot out of me to plan a meal and cook it. I'm so thankful for a system in which I plan my menu for the week and for having stocked up on sale items so I don't need to hit the grocery store this week. Another great idea for a sick mommy is children who are capable of preparing a simple meal. Mine help out often enough, but only once has my oldest made dinner mostly by himself. I think it's time to make sure they can measure things for themselves, and read a recipe properly! Next time I'm sick, I'll make sure we're stocked up with the ingredients for some basic meals, and have them do it all!
Breakfasts- oatmeal, muffins, fruit, milk ($4)
Lunches- PB&J, pretzels/popcorn, fruit, milk ($3)
Dinners-
Monday- Venison steaks, rice and broccoli, Peach Cobbler ($2)
Tuesday- (Date Night) kids- bean and cheese burritos, juice ($1)
Wednesday- red beans and rice ($2)
Thursday- Lasagna ($2)
Friday- Pizza Night ($2-3)
Saturday- Chili and Cornbread ($3-4)
Sunday- eat what you want night (leftovers)
